It’s the perfect mix of cozy comfort and fall flavor, and yes — it’s got pumpkin in it! 🎃 Don’t worry, this isn’t a dessert chili. The pumpkin makes it creamy, hearty, and oh-so-perfect for chilly nights by the fire.
Ingredients 🥕

1 lb ground beef or turkey

1 can (15 oz) black beans, drained

1 can (15 oz) kidney beans, drained

1 can (15 oz) diced tomatoes

1 can (15 oz) pumpkin purée (NOT pumpkin pie mix!)

1 cup corn (frozen or canned)

1 onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped

2 tbsp chili powder
-
1 tsp smoked paprika

1 tsp cumin

Salt + pepper to taste

2 cups chicken or veggie broth

Optional toppings: shredded cheddar, sour cream, green onions, jalapeños, or cornbread on the side

In a large pot, cook the ground beef (or turkey) over medium heat until browned. Drain any extra grease.

Add onion, garlic, and red bell pepper. Cook until softened and fragrant.

Stir in the beans, diced tomatoes, pumpkin purée, corn, and broth. Mix well.

Sprinkle in the chili powder, paprika, cumin, salt, and pepper. Stir until everything is cozy and blended.

Let it simmer on low heat for at least 30 minutes (longer if you can wait — the flavors just get better!).
